[Q] Using Unlocked Phone Internationally

I have a Verizon HTC One M7 phone. When I first got it, I S-OFF'd it and unlocked the bootloader. I currently have a version of ViperOne installed on the phone. My question is, can I use this phone with a different SIM card when I travel to China over the summer? I can not find a straight answer which takes into account the whole of my situation.
